Week 1 — Pesto Sauce & Tropical Hawaiian Chicken

MONDAY:

breakfast 
Paleo cookies and bannana



















monday's 10am snack:
Walnuts and crazins.

monday's lunch:
Pesto with chicken
fruit
carrots

Pesto Sauce
4 oz fresh basil (3 ½ cups)
1 cup walnut halves and pieces
6 garlic cloves
1 cup olive oil
1 tsp sea salt
Juice from ½ a lemon

monday's 3pm snack:
orange

dinner
Tropical hawaiian chicken with mango and pineapple
















This meal was AMAZZZZING.... only question is is orange juice paleo? I'm assuming fresh squeezed orange juice is better and to add the sweet element I would squeeze half a lemon or a couple squirts if you have lemon juice. I made this one up after getting fed up with all the other recipes I was looking at online. All the recipe's added too much extra S****t


tropical hawaiian chicken
2 chicken breasts
1 mango
1/2 of a pineapple (I bought a small pineapple)
1/2 red onion
Juice from ½ a lemon
2 oranges squeezed to make juice
A little coconut oil

1. chop everything up
2. little cocnut oil in pan
2. brown chicken on all sides
4. add onions. saute for 2-3min
5. add orange juice, let it boil
6. add pinaaple and mango.. YUM!
7. let it simmer and let the ingredients take in all the juices at a low temperature.
